Les caves d'aafinage du Fort des Rousses


The cheesemakers at Juraflore have chosen the remarkable site of Les Rousses fort for one of the largest Comté cheese ripening cellars in Europe.

An hour-and-a-half guided tour will show you the techniques used in the past and today to make and ripen cheese. Inside the cellars, it's 8 degrees all year round (wear warm clothing). You can watch an introductory video below.
